Wild Blueberry Lemon Muffins
Wild Blueberry Lemon Muffins is a blending of the sweet / tart blueberry with the far stronger tart taste of lemon for a delicious combination.
- 3 cups of flour
- ¾ cup of sugar
- ½ tsp of salt
- 1 ½ tbsp of baking powder
- 2 eggs – well beaten
- 4 tbsp lemon zest grated rind
- 1 ½ cup of milk
- 2/3 cup of melted butter
- 2 cups of fresh or frozen wild blueberries
- ¼ cup of melted butter 2nd amount
- 1 tbsp of lemon juice
- ¼ cup of sugar 2nd amount
Mix dry ingredients. Whisk egg, zest milk and melted butter. Stir in dry ingredients. Stir in blueberries. Fill Muffin tins 2/3 full. Bake 20 minutes at 400 degrees F or 200 degrees C.
While baking, combine second amount of butter with lemon juice. Put second amount of sugar in a bowl.
When muffins are slightly cool, dip tops into lemon butter then sugar.
