Wild Blueberry Lemon Muffins is a blending of the sweet / tart blueberry with the far stronger tart taste of lemon for a delicious combination.
Ingredients
3cupsof flour
¾cupof sugar
½tspof salt
1 ½tbspof baking powder
2eggs – well beaten
4tbsplemon zestgrated rind
1 ½cupof milk
2/3cupof melted butter
2cupsof fresh or frozen wild blueberries
¼cupof melted butter2nd amount
1tbspof lemon juice
¼cupof sugar2nd amount
Instructions
Mix dry ingredients. Whisk egg, zest milk and melted butter. Stir in dry ingredients. Stir in blueberries. Fill Muffin tins 2/3 full. Bake 20 minutes at 400 degrees F or 200 degrees C.
While baking, combine second amount of butter with lemon juice. Put second amount of sugar in a bowl.
When muffins are slightly cool, dip tops into lemon butter then sugar.
