Miss Pamela's Wild Blueberry Cupcakes
We have been asked many times to publish a cupcake recipe and so today we present Miss Pamela's Wild Blueberry Cupcakes. I am sure you will agree that Miss Pamela is a culinary genius.
- 1 pkg (2 layer) yellow cake mix
- 1 pkg (4 servings) lemon instant pudding mix
- 1/2 cup oil
- 1 cup sour cream
- 4 eggs
- 2 tsp vanilla
- 1 cup fresh or frozen wild blueberries
- sugar for garnish
Preheat oven to 350 F 175 C. Line muffin cups with paper liners.
Using mixer, mix together cake mix, pudding mix, oil, sour cream, eggs, and vanilla. Fold in blueberries.
Pour batter into prepared muffin cups. Sprinkle sugar on top.
Bake in preheated oven 20-25 minutes.
Makes 24 cupcakes
