Wild blueberry Jam
Wild Blueberry Jam is not only delicious but is so versatile because it goes with too many things to list here. The good thing is that it doesn't require a great imagination to find uses.
- 2 1/2 cups fresh or dry-pack frozen blueberries
- 3 cups sugar
- 1/2 cup orange juice
- 1 tablespoon lemon juice
- 1/2 bottle fruit pectin 3-ounce
Wash blueberries. Measure 2 ½ cups into enamel or stainless steel pan. Crush blueberries in pan. Add sugar and fruit juices. Mix well. Bring to full rolling boil and boil
hard for 1 minute, stirring constantly
Remove from heat Stir in pectin.
Seal in hot sterilized jars. Refrigerate.
Yields 3 to 4 (6-ounce) jars. Storage: 2 months.
