Double-Good Blueberry Pie
Jake's Double Good Wild Blueberry Pie may not be the best grammar you have ever heard but this blueberry pie might just be the best one you ever tasted.
- Baked 9-inch pie shell
- 3/4 Cup sugar
- 3 Tbsp cornstarch
- 1/4 tsp . salt
- 1/4 Cup water
- 4 C . fresh or frozen blueberries
- 1 Tbsp . butter
- 1 Tbsp . lemon juice
- Whipped cream (opt.)
Combine sugar, cornstarch and blueberries. Cook over medium heat until it comes to a boil and is thickened.
Mixture should be clear and very thick. Remove from heat and stir in butter and lemon juice. Cool
Place remaining 2 cups raw blueberries in pie shell. Top with blueberry mixture. Chill and serve with whipped cream.
