Frosty Wild Blueberry Cheesecake

Frosty Wild Blueberry Cheesecake is one of the rare recipes that actually calls for frozen blueberries in the ingredients.

Ingredients

  • 1 cup Graham crackers crumbs
  • 2 tbsp white sugar
  • ¼ cup of melted butter
  • 2 8 oz packages of cream cheese soften
  • 1 cup sour cream
  • ¾ cup white sugar
  • 1 tsp vanilla extract
  • 2 tbsp all purpose flour
  • 4 eggs
  • 2 cups frozen wild blueberries
  • 1/3 cup blueberry jelly

Instructions

  • Preheat oven to 350 F or 176 C
  • In a bowl, mix together the crumbs, 2 tbsp of the sugar and butter
  • Place the mixture in the bottom of a 9 inch spring form pan
  • In a bowl add the cream cheese and mash until it is soft and creamy
  • Slowly add the sour cream, 3.4 cup of sugar. Vanilla and flour, beating continuously.
  • Add the eggs, one at a time, beating continuously.
  • Spread the mixture over the crumb mixture evenly.
  • Cook in over for an hour.
  • Remove from oven and let cool then remove cake from pan.
  • Arrange the frozen blueberries over the cake.
  • Melt the jelly and spread over blueberries to glaze.
  • Refrigerate before serving.
