Instructions

  • 1 package pound cake mix
    1 cup fresh blueberries, rinsed and drained
    1/3 cup chopped nuts
    1/3 cup raisins
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    2 cups confectioners' sugar
    Lemon juice
    Prepare pound cake mix according to package directions. When batter is ready gently fold in blueberries, nuts, raisins and spices. Pour mixture into 3 greased and floured 3 x 51/2 x 2 inch loaf pans. (If small pans are not available, use two regular-size loaf pans.)
    Bake according to package directions allowing 10 minutes less baking time. Unmold and cool on a rack. Mix confectioners' sugar with enough lemon juice until the consistency of heavy cream.
    Spoon glaze over loaves. Cool thoroughly before slicing.
