Ingredients
1 ¾cupsflour
1tspcinnamon
½tspbaking soda
¼tspbaking powder
¼tspsalt
1tspground ginger
½tspnutmeg
½stick unsalted butteror ½ cup coconut oil, softened
¼cupdark brown sugar
¼cupsugar+ more for rolling
1egg
1tspvanilla
1/3cupmolasses
1cupfrozen or fresh Wild Blueberries
Instructions
Preheat the oven to 350 F 175 C.
Combine flour, baking soda, baking powder, salt, and spices together in a bowl. Set aside. Beat the butter or oil with the sugar.
Add the egg, vanilla, and molasses. Gradually add in the dry ingredients and beat until just combined.
Gently fold in the frozen Wild Blueberries.
Place about ¼ cup of sugar into a shallow bowl. Scoop batter into balls and roll each ball in the sugar until well coated.
Place onto a greased baking sheet and bake for 11-13 minutes. Let cool and then transfer to wire rack.
