Finally, a treat that will get all us morning haters a reason to get out of bed as we present our recipe for Early Morning Wild Blueberry Breakfast Cake.
Ingredients
2cupsall-purpose flour
1/2cupsugar
2teaspoonsbaking powder
1egglightly beaten
1/2cupmilk
1/4cupbutter or margarinesoftened
1teaspoongrated lemon peel
2cupsfresh or frozen wild blueberries
TOPPING:
1/3cupsugar
1/4cupall-purpose flour
1/4cupfinely chopped walnuts
1/2teaspoonground cinnamon
3tablespoonscold butter or margarine
Instructions
In a mixing bowl, combine flour, sugar and baking powder. Add egg, milk, butter and lemon peel; mix just until dry ingredients are moistened. Fold in the blueberries. Spread in a greased 9-in. square baking pan.
For topping, combine sugar, flour, walnuts and cinnamon. Cut in butter until mixture is crumbly. Sprinkle over batter.
Bake at 350 degrees F (176 degrees Celsius) for 40-45 minutes or until cake tests done.
