North Pole Wild Blueberry Roll

Today’s recipe of North Pole Wild Blueberry Roll is the blueberry’s answer to the jelly roll. And what a wonderful answer it is.

Ingredients

  • 3 cups of all purpose flour
  • 1 tsp salt
  • ¾ cup of shortening
  • 6 tbsp cold water
  • 4 cups wild blueberries
  • 1 pinch ground cinnamon
  • ¼ cup white sugar
  • ¼ cup butter chilled and diced

Instructions

  • Preheat oven to 350F or 176C
  • In a large bowl, mix together the flour and the salt.
  • With a pastry cutter, cut the shortening till the mixture resembles coarse crumbs
  • Add the water and mix the mixture forms a ball
  • Divide the dough into two portions and shape each into a ball
  • Place the dough onto a floured surface and roll from the center to the edges into a 12-inch circle.
  • Place about 2 cups of the blueberries onto each circle, leaving a 2-inch border.
  • Top with cinnamon, sugar and butter slices
  • Roll pastry like a jelly roll, tucking the edges and arranging on a cookie sheet.
  • Bake in oven for about 60 minutes.
