Wild Blueberry Walnut Bread

Wild Blueberry Walnut Bread shows the versatility of the wild blueberry as it is paired with the walnut. As always, this partnership works very well.


  • ½ cup flour
  • ½ cup sugar
  • ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 egg , beaten
  • Juice and grated rind of one orange
  • 2 tablespoons butter
  • Boiling water
  • 1 cup wild blueberries
  • ¼ cup chopped walnuts
  • ¼ cup flour


  • Sift or stir together flour, sugar, baking powder, baking soda and salt. Stir in beaten egg. In a measuring cup, place the juice and grated rind of one orange and 2 tablespoons butter. Add boiling water to make ¼ cup and stir liquid into dry ingredients.
  • Combine blueberries and walnuts and ¼ cup flour. Fold into batter and when combined, pour into the buttered 8 x 4 x 2 inch pan. Bake for 1 hour at 350° F or 175 degrees C
