Katie’s Wild Blueberry Cake

Katie’s Wild Blueberry Cake is sure to be a big hit at dessert time. The total time to prepare this dessert, from start to finish, is only an hour.


  • 1 cup sugar
  • ¼ cup margarine
  • Two eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 Teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 cup wild blueberries lightly dusted with flour


  • Preheat oven to 350° F (176 C) lightly oil nine by 12 inch cake pan
  • In a large bowl using a mixer to cream the sugar and margarine. Add the eggs and vanilla and mix until smooth 
  • In another bowl, mix together the flour baking powder and salt. Add the milk and mix well. Add the flour and milk mixture to the sugar and butter and mix by hand. Fold in the blueberries 
  • Transfer the batter to the cake pan tap lightly on the counter to release any air bubbles. Bake 45 minutes or until a toothpick
