Wild Blueberry Lemon Muffins

Wild Blueberry Lemon Muffins is a blending of the sweet / tart blueberry with the far stronger tart taste of lemon for a delicious combination.


  • 3 cups of flour
  • ¾ cup of sugar
  • ½ tsp of salt
  • 1 ½ tbsp of baking powder
  • 2 eggs – well beaten
  • 4 tbsp lemon zest grated rind
  • 1 ½ cup of milk
  • 2/3 cup of melted butter
  • 2 cups of fresh or frozen wild blueberries
  • ¼ cup of melted butter 2nd amount
  • 1 tbsp of lemon juice
  • ¼ cup of sugar 2nd amount


  • Mix dry ingredients. Whisk egg, zest milk and melted butter. Stir in dry ingredients. Stir in blueberries. Fill Muffin tins 2/3 full. Bake 20 minutes at 400 degrees F or 200 degrees C.
  • While baking, combine second amount of butter with lemon juice. Put second amount of sugar in a bowl.
  • When muffins are slightly cool, dip tops into lemon butter then sugar.
