Wild Blueberry Batter Cake
Wild Blueberry Batter Cake. Did we just use the words blueberries and cake in the same sentence. You better believe it.
- 2 c. blueberries
- juice of 1/2 lemon
- 3/4 c. sugar
- 3 Tbsp. butter
- 1/2 c. milk
- 1 c. sifted flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 c. boiling water
- 1 c. sugar
- 1 Tbsp. cornstarch
ine a well-greased 8 x 8 x 2-inch pan with blueberries.
Sprinkle with lemon juice.
Cream sugar and butter together; add milk alternately with flour, baking powder and salt, which have been sifted together.
Pour this batter evenly over blueberries.
Combine sugar and cornstarch.
Sprinkle over the top of the cake.
Pour boiling water over all and bake in a 375 F of 190 C oven for 1 hour. Serves 9.
