Wild Blueberry Batter Cake. Did we just use the words blueberries and cake in the same sentence. You better believe it.

Ingredients

  • 2 c. blueberries
  • juice of 1/2 lemon
  • 3/4 c. sugar
  • 3 Tbsp. butter
  • 1/2 c. milk
  • 1 c. sifted flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. boiling water
  • 1 c. sugar
  • 1 Tbsp. cornstarch

Instructions

  • ine a well-greased 8 x 8 x 2-inch pan with blueberries.
  • Sprinkle with lemon juice.
  • Cream sugar and butter together; add milk alternately with flour, baking powder and salt, which have been sifted together.
  • Pour this batter evenly over blueberries.
  • Combine sugar and cornstarch.
  • Sprinkle over the top of the cake.
  • Pour boiling water over all and bake in a 375 F of 190 C oven for 1 hour. Serves 9.
