Wild Blueberry Brancakes

Wild Blueberry Brancakes, despite the obvious pun, is a great take on healthy pancakes. Get out the skillet or griddle and give them a try.


  • 2 1/2 cups all purpose flour
  • 1/2 cup buckwheat
  • 1/2 cup wheat or oat bran
  • 1/4 cup wheat germ
  • 1 tsp baking soda
  • 2 eggs well beaten
  • 2 1/2 cups milk
  • 1/3 cup honey
  • 1/4 cup oil
  • 1 tsp pure vanilla
  • Grated rind of 1 orange
  • 2 cups wild blueberries


  1. Combine flour, buckwheat, bran, wheat germ, baking powder and baking soda in a large bowl
  2. In another bowl mix eggs, milk, honey, oil and vanilla. Ad liquid mixture to dry ingredients, then add orange rind and blueberries. Stir till everything is well-moistened.
  3. For each pancake, spoon about 1/3 cup batter onto a preheated, slightly oiled griddle or skillet. Bake till bubbles form, then turn once and brown second side.
