
Wild Blueberry Brancakes
Wild Blueberry Brancakes, despite the obvious pun, is a great take on healthy pancakes. Get out the skillet or griddle and give them a try.
Ingredients
- 2 1/2 cups all purpose flour
- 1/2 cup buckwheat
- 1/2 cup wheat or oat bran
- 1/4 cup wheat germ
- 1 tsp baking soda
- 2 eggs well beaten
- 2 1/2 cups milk
- 1/3 cup honey
- 1/4 cup oil
- 1 tsp pure vanilla
- Grated rind of 1 orange
- 2 cups wild blueberries
Instructions

Combine flour, buckwheat, bran, wheat germ, baking powder and baking soda in a large bowl

In another bowl mix eggs, milk, honey, oil and vanilla. Ad liquid mixture to dry ingredients, then add orange rind and blueberries. Stir till everything is well-moistened.

For each pancake, spoon about 1/3 cup batter onto a preheated, slightly oiled griddle or skillet. Bake till bubbles form, then turn once and brown second side.
