Wild Blueberry Banana Bread
Wild Blueberry Banana Bread narrowly edged out Ozark Blueberry Pie in the competition for today's recipe. Imagine the delight of banana bread with blueberries sprinkled throughout. No wonder it won.
- 2 cups of all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1 cup sugar
- Two eggs
- 2 teaspoons vanilla extract
- Two medium ripe bananas mashed
- 1 cup wild blueberries
In a bowl, combine the flour, baking soda and salt. In a large mixing bowl, cream the shortening and sugar. Add eggs and vanilla; mix well. And in bananas. Gradually add the dry ingredients, beating just until combined. Pour in blueberries.
Pour into three greased five and ¾ inch by 3 inch by 2 inch loaf pans. Bake at 350° F - 176 C from 30 to 35 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes before removing from pans to wire racks
