Ingredients
- 2 cups fresh/frozen wild blueberries
- * 1/2 cup water
- * 1/2 cup white sugar or 2/3 cups honey
- * 2 TBSP lemon juice
- * 2 TBSP cornstarch - mix with 2 TBSP water in a small bowl and set aside
- * 1/2 teaspoon vanilla
Instructions
- In a medium pot over medium heat, combine the blueberries, water, sugar and lemon juice. Stir frequently and bring to a low boil.
- Slowly stir in the cornstarch and simmer until the compote/sauce coats the spoon which is usually around 5 minutes.
- Remove from heat and stir in the vanilla.
- Fits well in a medium mason jar but can be put in any container. Let cool before putting in the fridge.
