Michelle's Homemade Wild Blueberry Compote

Today's recipe, Michelle's Homemade Wild Blueberry Compote is courtesy of Michelle H. We would like to thank her for generously providing us with her recipe.

Ingredients

  • 2 cups fresh/frozen wild blueberries
  • * 1/2 cup water
  • * 1/2 cup white sugar or 2/3 cups honey
  • * 2 TBSP lemon juice
  • * 2 TBSP cornstarch - mix with 2 TBSP water in a small bowl and set aside
  • * 1/2 teaspoon vanilla

Instructions

  • In a medium pot over medium heat, combine the blueberries, water, sugar and lemon juice. Stir frequently and bring to a low boil.
  • Slowly stir in the cornstarch and simmer until the compote/sauce coats the spoon which is usually around 5 minutes.
  • Remove from heat and stir in the vanilla.
  • Fits well in a medium mason jar but can be put in any container. Let cool before putting in the fridge.

Notes

Wonderful on pancakes,oatmeal, bananas and ICE CREAM
